Olive Oil Pound Cake by Mrs. Maria Flora Monini
Ingredients
4 eggs
6oz plain yogurt
2 1/4 cups sugar
3 cups all-purpose flour
1/3 cup Monini Monocultivar Nocellara Extra Virgin Olive Oil
1 small pouch of dry yeast
Instructions
Step 1
Preheat oven to 350°F.
Step 2
Mix yogurt, sugar, flour, and oil in a bowl with a wooden or silicone spatula.
Step 3
When nice and smooth, add the yeast and incorporate into the mix.
Step 4
Pour the mix in a baking classic round pan or a round Bundt pan (round pan with a hole in the middle), previously coated evenly with some olive oil.
Step 5
Make sure to leave enough room in the pan for the cake to rise during cooking.
Step 6
Place the baking pan in the oven and cook for 40 minutes or until a toothpick inserted in the cake comes out dry.
Step 7
When cooked, carefully remove the cake from the pan by placing the serving dish on top of the pan and turn upside down.
Step 8
Let the cake cool and sprinkle confectionary sugar on top before serving.
