Whole Wheat Pitta with Olive Oil and Mushrooms
Ingredients
60g finely chopped carrots
60g finely chopped cucumber
135g finely chopped mushrooms
40g finely chopped red onion
10g finely chopped rocket
½ teacup water
Salt
120g canned tuna in water
2tbsp atsas organic extra virgin olive oil
½ lemon – lemon zest
2 small whole-wheat pittas (2 x 44g)
Instructions:
Step 1
Place the mushrooms in a saucepan and boil them until soft. Let them cool and set aside.
Step 2
Add the chopped cucumber, carrot, red onion, and rocket in a bowl and mix together.
Step 3
Then, add the mushrooms, salt, tuna, atsas organic extra virgin olive oil, and lemon zest. Toss until evenly combined.
Serve the mixture into the whole wheat pittas.
Each serving, of this recipe, is high in Vitamin A (500 IU), Phosphorus (202 mg), and is high in Calcium (360 mg).
