Spaghetti with Olive Oil, Avocado and Cottage Cheese

Ingredients

  • 100g atsas organic extra virgin olive oil

  • 300g avocado

  • 200g cottage cheese

  • 10g fresh basil

  • Lemon juice (1 lemon)

  • Salt

  • Pepper

  • 200g whole grain spaghetti (per serving)

  • 1 tsp atsas organic extra virgin olive oil (per serving)


Instructions

Step 1
Add in the blender the atsas organic extra virgin olive oil, avocado, cottage cheese, basil, lemon juice, salt and pepper. Blend until all ingredients are smooth and fully incorporated, and the spaghetti salsa is ready! Use (approximately) 80g of salsa for each portion.

Step 2
Mix the salsa with the boiled wholegrain spaghetti and garnish with some freshly-ground pepper and a teaspoon of atsas organic extra virgin olive oil.
