Zucchini Olive Oil Balls

Ingredients

  • 250g zucchini

  • 80g leek

  • ½ teacup water

  • 100g oatmeal

  • 100g almonds

  • 50g atsas organic extra virgin olive oil

  • Salt

  • Pepper

  • Extra oatmeal for garnish


Instructions

Step 1
Finely chop the leek and the zucchini and place them in a non-stick frying pan with some water. Cook until wilted. Let them cool and place them in the blender. 

Step 2
Add the oatmeal, almonds, atsas organic extra virgin olive oil, salt, and pepper. Blend until the mixture is smooth and fully incorporated. Place the mixture in a bowl and refrigerate for at least 3 hours.

Step 3
Remove the mixture from the fridge and shape it into small balls (25g each). Garnish the zucchini olive oil balls with some oatmeal, and enjoy.

The recipe makes about 21 small balls (25g each). The Nutrition facts provided are one ball (25g).
